Chef Gilles André
Gilles grew up in Épinal. He always dreamt of becoming a pastry chef. From the age of15, during weekends and the festive seasons, he would wear the uniform of an apprentice chef alongside a great pastry chef from the city. After a training at the hotel school in Gérardmer, Gilles adjusted his plans to that of becoming a cook. His adventure started in small restaurants, but his real passion arose when he met a renowned Michelin-starred chef from the Vosges region.
With the experience he gained, he could combine the basics of a classic cuisine in a modern and creative spirit.
The sommelier Claudine André
Claudine is a graduate from the hotel school of Strasbourg and started her career in a restaurant in Vittel, She met Gilles there. Claudine was trained in sommelier skills by one of the best sommeliers in France and driven by her passion for wine, she is always on the lookout for new wines to offer to her customers.
Perfectionist, calm, and mindful of others, it is with enthusiasm and consideration that Claudine will welcome you in the dining room.
After ten years serving others in the Ardennes, Moselle, and Paris region, the urge to fend for themselves led them to Troyes. Claudine and Gilles then took over from Alain Vattier.
